Instructions
- Preheat the oven to 450°F.
- Grease a nonstick sheet pan with cooking oil.
- Combine gruyere, parmesan, and white cheddar cheeses in a bowl and set aside.
- In a saucepan over medium heat, combine heavy cream, garlic, thyme, onion powder, lemon zest, salt, and pepper, whisking until it reaches a gentle boil, then simmer for 2 minutes.
- Wash and slice the potatoes into 1/8 inch thick coins.
- Layer half of the sliced potatoes on the baking sheet, sprinkle with half of the cheese mixture, then add the remaining potatoes on top.
- Pour the creamy sauce evenly over the potatoes and cover with foil.
- Bake for 20 minutes, then remove the foil and sprinkle with the remaining cheese mixture.
- Bake for another 20 minutes until the top is golden and crispy.
- Allow to cool slightly, then sprinkle with fresh chives and serve.
