Ingredients

The Potatoes

  • 3 pounds Yukon Gold Potatoes

The Cheese

  • 1 cup Gruyere Cheese
  • 1 cup Parmesan Cheese
  • ¾ cup White Cheddar

The Cream Sauce

  • 2 ¼ cups Heavy Cream
  • 2 tablespoons Fresh Thyme
  • 6 cloves Garlic
  • 1 tablespoon Onion Powder
  • 1 unit Lemon Zest
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Ground Black Pepper

The Garnish

  • 1 bunch Chives

Instructions

  1. Preheat the oven to 450°F.
  2. Grease a nonstick sheet pan with cooking oil.
  3. Combine gruyere, parmesan, and white cheddar cheeses in a bowl and set aside.
  4. In a saucepan over medium heat, combine heavy cream, garlic, thyme, onion powder, lemon zest, salt, and pepper, whisking until it reaches a gentle boil, then simmer for 2 minutes.
  5. Wash and slice the potatoes into 1/8 inch thick coins.
  6. Layer half of the sliced potatoes on the baking sheet, sprinkle with half of the cheese mixture, then add the remaining potatoes on top.
  7. Pour the creamy sauce evenly over the potatoes and cover with foil.
  8. Bake for 20 minutes, then remove the foil and sprinkle with the remaining cheese mixture.
  9. Bake for another 20 minutes until the top is golden and crispy.
  10. Allow to cool slightly, then sprinkle with fresh chives and serve.
