Mashed Potato Gratin

Ingredients

The potatoes

  • 3 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 3 springs rosemary
  • 3 cloves garlic, smashed
  • 1 tablespoon salt

The creamy mixture

  • ¾ cup butter, divided
  • cup half and half
  • 4 ounces cream cheese, cubed
  • 8 ounces gruyere cheese, shredded
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon sea salt, to taste
  • ½ teaspoon freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 450°F.
  2. 2. Butter a 2-quart baking dish.
  3. 3. Place the potatoes, rosemary, garlic, and salt in a large pot and cover with cold water by 1 inch.
  4. 4. Bring to a boil, then reduce to a simmer and cook for 15 to 18 minutes until the potatoes are tender.
  5. 5. Drain and discard the rosemary.
  6. 6. Press the potatoes and garlic through a potato ricer or mash with a potato masher.
  7. 7. Stir in ½ cup of the butter until melted, then add the half-and-half gradually until the desired consistency is reached.
  8. 8. Stir in the cream cheese until melted, then add the gruyere cheese and chives, seasoning with salt and pepper.
  9. 9. Transfer the mixture to the prepared baking dish and dot with the remaining ¼ cup of butter.
  10. 10. Bake for 25 minutes.
