Goat Cheese Potato Gratin

Ingredients

The potatoes and cheese

  • 5 pounds Yukon Gold potatoes
  • 6 ounces Gruyère cheese
  • 4 ounces goat cheese

The sauce

  • ¼ cup unsalted butter
  • 6 cloves garlic
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • to taste none Kosher salt
  • to taste none freshly ground pepper

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch baking dish.
  2. Melt the butter in a saucepan over medium heat, then add the garlic and cook until fragrant.
  3. Stir in the flour and cook for 1 minute, then gradually add the milk, stirring frequently until thickened.
  4. Remove from heat and mix in the Gruyère cheese, reserving ¼ cup for topping, and season with salt and pepper.
  5. Layer the potatoes in the baking dish, adding cheese sauce and dollops of goat cheese between layers.
  6. Cover with foil and bake for 1 hour and 15 minutes.
  7. Remove the foil, sprinkle the reserved Gruyère cheese on top, and bake for an additional 15 minutes until golden brown.
  8. Let the gratin rest for about 15 minutes before serving.
