Instructions
- Preheat the oven to 350°F and prepare a 9x13-inch baking dish.
- Melt the butter in a saucepan over medium heat, then add the garlic and cook until fragrant.
- Stir in the flour and cook for 1 minute, then gradually add the milk, stirring frequently until thickened.
- Remove from heat and mix in the Gruyère cheese, reserving ¼ cup for topping, and season with salt and pepper.
- Layer the potatoes in the baking dish, adding cheese sauce and dollops of goat cheese between layers.
- Cover with foil and bake for 1 hour and 15 minutes.
- Remove the foil, sprinkle the reserved Gruyère cheese on top, and bake for an additional 15 minutes until golden brown.
- Let the gratin rest for about 15 minutes before serving.
