Ingredients

The potatoes

  • 6 medium Yukon gold potatoes, peeled and sliced 1/8-inch thick

The sauce

  • 2 tbsp light butter, melted
  • 1/2 tsp garlic powder
  • 3 oz shredded reduced-fat Cheddar cheese
  • 1 cup fat free milk
  • 1 bay leaf
  • 1 pinch freshly grated nutmeg
  • 2 tsp thyme

For seasoning

  • to taste salt and fresh pepper

For cooking

  • as needed olive oil spray

Instructions

  1. Preheat the oven to 425°F.
  2. Spray an 11 x 7-inch baking dish with cooking spray.
  3. In a large bowl, combine the sliced potatoes, melted butter, salt, garlic powder, and pepper.
  4. Arrange half of the potato slices in the baking dish and top with 1/4 cup of cheese.
  5. Add the remaining potato slices on top.
  6. In a small saucepan, bring the milk, thyme, bay leaf, and nutmeg to a boil; then pour over the potatoes.
  7. Top with the remaining cheese and bake uncovered for 45 to 50 minutes, or until the potatoes are tender.
