Lightened Scalloped Potatoes

Ingredients

The potatoes

  • 3 lb yukon gold potatoes

The sauce

  • 1 tbsp butter
  • ½ unit yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme
  • 1 tsp salt
  • ½ tsp pepper
  • pinch unit cayenne
  • 1 cup milk
  • 1 tbsp arrowroot powder (or ½ tbsp cornstarch)
  • 1 cup shredded white cheddar cheese

Instructions

  1. 1. Preheat the oven to 400°F and spray a 7x11 dish with nonstick spray.
  2. 2. Thinly slice the potatoes to about 1/8 inch thick and layer half in the dish.
  3. 3. In a saucepan over medium-high heat, melt the butter, then add the onion and sauté until softened.
  4. 4. Add garlic, thyme, salt, pepper, and cayenne, stirring to combine.
  5. 5. Whisk in milk and arrowroot powder, simmering until the mixture thickens, then turn off the heat.
  6. 6. Stir in 1/3 of the cheddar cheese until melted.
  7. 7. Pour half of the cheese sauce over the first layer of potatoes and spread it out.
  8. 8. Add the remaining potatoes on top, pour the rest of the cheese sauce over them, and spread evenly.
  9. 9. Top with the remaining cheese and bake for 40-45 minutes until golden brown and bubbly.
