Lightened Scalloped Potatoes

Instructions
- 1. Preheat the oven to 400°F and spray a 7x11 dish with nonstick spray.
- 2. Thinly slice the potatoes to about 1/8 inch thick and layer half in the dish.
- 3. In a saucepan over medium-high heat, melt the butter, then add the onion and sauté until softened.
- 4. Add garlic, thyme, salt, pepper, and cayenne, stirring to combine.
- 5. Whisk in milk and arrowroot powder, simmering until the mixture thickens, then turn off the heat.
- 6. Stir in 1/3 of the cheddar cheese until melted.
- 7. Pour half of the cheese sauce over the first layer of potatoes and spread it out.
- 8. Add the remaining potatoes on top, pour the rest of the cheese sauce over them, and spread evenly.
- 9. Top with the remaining cheese and bake for 40-45 minutes until golden brown and bubbly.
