Scalloped Potatoes

The potatoes

Instructions
- Preheat the oven to 350°F and prepare a 13 by 9-inch baking dish with non-stick spray.
- Melt the butter in a saucepan over medium heat, then add the onion and sauté for 3 minutes.
- Add the flour and garlic, sauté for 1 minute, then whisk in the milk and bring to a light boil while stirring frequently.
- Remove from heat and stir in the cheese, seasoning with salt and pepper to taste.
- Peel and slice the potatoes into 1/6-inch slices using a mandolin, then layer half in the baking dish.
- Pour half of the sauce over the first layer of potatoes, then add the remaining potatoes and top with the remaining sauce.
- Bake in the preheated oven until the potatoes are tender, about 55 to 70 minutes.
- Garnish with parsley if desired and serve warm.
