Scalloped Potatoes

Ingredients

The sauce

  • 3 Tbsp butter
  • 1 cup chopped yellow onion
  • 3 Tbsp all-purpose flour
  • 1 Tbsp minced garlic
  • 2 ¾ cups whole milk
  • 1 ¼ cups shredded sharp white cheddar cheese
  • Salt and freshly ground black pepper to taste

The potatoes

  • 2 ¾ lbs red potatoes

Garnish

  • 1 Tbsp minced fresh parsley (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a 13 by 9-inch baking dish with non-stick spray.
  2. Melt the butter in a saucepan over medium heat, then add the onion and sauté for 3 minutes.
  3. Add the flour and garlic, sauté for 1 minute, then whisk in the milk and bring to a light boil while stirring frequently.
  4. Remove from heat and stir in the cheese, seasoning with salt and pepper to taste.
  5. Peel and slice the potatoes into 1/6-inch slices using a mandolin, then layer half in the baking dish.
  6. Pour half of the sauce over the first layer of potatoes, then add the remaining potatoes and top with the remaining sauce.
  7. Bake in the preheated oven until the potatoes are tender, about 55 to 70 minutes.
  8. Garnish with parsley if desired and serve warm.
