Cheesy Hasselback Potato Au Gratin

Instructions
- Preheat the oven to 425°F.
- Slice the potatoes thinly, leaving 1/8 inch at the bottom, and toss with olive oil, salt, and pepper in a baking dish.
- Roast the potatoes for 20-25 minutes.
- In a bowl, mix together the cream, garlic, cheeses, thyme, and a pinch of salt and pepper.
- Pour the cream mixture over the potatoes, add the butter slices, and roast for another 20-25 minutes until the sauce thickens and the potatoes are tender.
