Ingredients

The salad

  • 2 lbs red potatoes, cut into chunks
  • ½ cup finely diced red onion
  • ½ cup diced celery
  • ¼ cup chopped fresh chives (plus more for garnish)
  • ½ cup crumbled blue cheese (plus more for garnish)

The dressing

  • ¾ cup full-fat sour cream
  • 2 tablespoons whole milk
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

Instructions

  1. 1. Boil the cubed potatoes in a large saucepan covered with water until fork tender, about 8-10 minutes.
  2. 2. Drain the potatoes and place them in a large bowl, then add the red onion, celery, and chives, and toss gently.
  3. 3. In a separate bowl, whisk together the sour cream, milk, vinegar, salt, and pepper, then stir in the blue cheese crumbles.
  4. 4. Pour the dressing over the potato mixture and toss gently to coat.
  5. 5. Cover and chill in the refrigerator until ready to serve, garnishing with additional blue cheese and chives before serving.
