Blue Cheese Potato Salad

The dressing

Instructions
- 1. Boil the cubed potatoes in a large saucepan covered with water until fork tender, about 8-10 minutes.
- 2. Drain the potatoes and place them in a large bowl, then add the red onion, celery, and chives, and toss gently.
- 3. In a separate bowl, whisk together the sour cream, milk, vinegar, salt, and pepper, then stir in the blue cheese crumbles.
- 4. Pour the dressing over the potato mixture and toss gently to coat.
- 5. Cover and chill in the refrigerator until ready to serve, garnishing with additional blue cheese and chives before serving.
