Instructions
- 1. Grill the zucchini, eggplant, red pepper, and yellow squash brushed with olive oil and balsamic vinegar.
- 2. Chop the tomatoes and fresh basil.
- 3. Cook the pasta and rinse it under cold water.
- 4. Prepare the balsamic dressing by whisking together balsamic vinegar, olive oil, garlic, shallots, Dijon mustard, chopped basil, salt, and pepper.
- 5. In a large bowl, combine the pasta, grilled vegetables, and basil.
- 6. Pour the dressing over the pasta and vegetables, mixing until well coated.
- 7. Add feta cheese and serve cold.
