Ingredients

The vegetables

  • 1 medium Zucchini
  • 1 medium Eggplant
  • 1 medium Red pepper
  • 1 medium Yellow Squash
  • 1 cup Chopped tomatoes
  • ¼ cup Fresh basil

The pasta

  • 8 ounces Pasta

The dressing

  • ¼ cup Balsamic vinegar
  • ¼ cup Olive oil
  • 1 clove Garlic
  • 1 small Shallot
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste Pepper

The garnish

  • ½ cup Feta cheese

Instructions

  1. 1. Grill the zucchini, eggplant, red pepper, and yellow squash brushed with olive oil and balsamic vinegar.
  2. 2. Chop the tomatoes and fresh basil.
  3. 3. Cook the pasta and rinse it under cold water.
  4. 4. Prepare the balsamic dressing by whisking together balsamic vinegar, olive oil, garlic, shallots, Dijon mustard, chopped basil, salt, and pepper.
  5. 5. In a large bowl, combine the pasta, grilled vegetables, and basil.
  6. 6. Pour the dressing over the pasta and vegetables, mixing until well coated.
  7. 7. Add feta cheese and serve cold.
