Ingredients

The pasta

  • 12 oz rotini pasta

The vegetables

  • 1 cup chopped broccoli
  • ½ cup chopped zucchini
  • ½ cup chopped squash
  • ¼ cup chopped red peppers
  • ¼ cup chopped orange peppers
  • ¼ cup sliced red onions

The dressing

  • cup olive oil
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ¼ cup plain Greek yogurt or sour cream
  • 1 teaspoon mayo
  • to taste salt and pepper

Instructions

  1. Cook the rotini according to the package instructions.
  2. Rinse the rotini in cold water and pat dry.
  3. Grill or sauté the vegetables or serve them fresh.
  4. Combine the rotini with the vegetables and the remaining ingredients in a serving dish.
  5. Taste and adjust the seasoning as necessary.
  6. Chill for at least 1 hour, preferably 2-3 hours.
