Ingredients

Vegetables

  • 1 cup chopped broccoli
  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • ¾ cup chopped yellow squash
  • ¾ cup chopped zucchini
  • ½ cup chopped red onion

Pasta

  • 12 ounces your favorite pasta, gluten-free if needed

Dressing

  • ¼ cup balsamic vinegar
  • ¾-1 teaspoon sea salt
  • ½ teaspoon lemon pepper
  • ½ teaspoon garlic powder
  • 1 drizzle olive oil (or broth for oil-free)

Instructions

  1. Marinate the raw veggies in the dressing ingredients overnight for best flavor.
  2. Cook the pasta according to package directions and rinse in cold water.
  3. Combine the marinated veggies and pasta in a large bowl and mix well.
  4. Serve the pasta salad.
