Ingredients

  • 2 tablespoons unsalted butter
  • 2 small shallots, roughly chopped
  • 3-4 cloves garlic, minced
  • 1 pint cherry tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon vegetable bouillon
  • 2 cups water
  • 1 cup orzo
  • ¼ teaspoon salt
  • ¼ cup fresh chopped basil
  • to taste parmesan, for garnish (optional)

Instructions

  1. Heat a tall-sided skillet or medium pot over medium-high heat and add the butter.
  2. Once the butter is melted, add the chopped shallots and cherry tomatoes, cooking until the shallots soften and turn golden.
  3. Add the minced garlic, tomato paste, and vegetable bouillon, cooking until the garlic is aromatic.
  4. Smash the cherry tomatoes with a potato masher, then pour in the water and bring to a boil.
  5. Stir in the orzo and salt, reduce heat to a low simmer, cover, and cook for 10-12 minutes, stirring every 3-4 minutes.
  6. Remove the lid and continue simmering until the orzo is fully cooked and the sauce thickens, about 2-3 minutes.
  7. Stir in the chopped basil, taste, and adjust seasoning if necessary before serving.
