One Pot Orzo with Cherry Tomatoes

Instructions
- Heat a tall-sided skillet or medium pot over medium-high heat and add the butter.
- Once the butter is melted, add the chopped shallots and cherry tomatoes, cooking until the shallots soften and turn golden.
- Add the minced garlic, tomato paste, and vegetable bouillon, cooking until the garlic is aromatic.
- Smash the cherry tomatoes with a potato masher, then pour in the water and bring to a boil.
- Stir in the orzo and salt, reduce heat to a low simmer, cover, and cook for 10-12 minutes, stirring every 3-4 minutes.
- Remove the lid and continue simmering until the orzo is fully cooked and the sauce thickens, about 2-3 minutes.
- Stir in the chopped basil, taste, and adjust seasoning if necessary before serving.
