Blistered Tomatoes with Orzo

Ingredients

The main ingredients

  • 2 cups cherry tomatoes
  • 1 cup dried orzo pasta
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups water
  • 1 tbsp chicken or vegetable stock paste
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup fresh chopped basil
  • ¼ cup fresh minced chives

The cooking ingredients

  • 2 tbsp olive oil

Instructions

  1. Heat a tall-sided skillet or medium pot over high heat and add the tomatoes, cooking for 3-5 minutes until blistered.
  2. Reduce heat to medium, add 1 tbsp olive oil, salt, and pepper, and cook for another 3-4 minutes.
  3. Remove half of the tomatoes and set aside.
  4. In the same pan, add the remaining olive oil, diced onion, and minced garlic, cooking for 6-8 minutes until softened.
  5. Add the stock paste, salt, pepper, water, orzo, half of the basil, and half of the chives, stirring to combine.
  6. Bring to a boil, then reduce to medium-low and cover partially, stirring every 3-4 minutes.
  7. Cook until the orzo is al dente, about 9-12 minutes, adding more water if necessary.
  8. Taste and adjust seasoning, then top with reserved tomatoes, remaining basil, and chives. Drizzle with olive oil if desired.
