Ingredients

The soup base

  • 1 tablespoon olive oil
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 2 pieces bay leaves
  • 3 15-ounce cans diced tomatoes
  • 1 15-ounce can vegetable broth
  • 1 teaspoon brown sugar
  • ¼ cup chopped fresh basil
  • 1 dash crushed red pepper flakes
  • to taste salt
  • to taste freshly ground black pepper

The creamy addition

  • ½ cup plain Greek yogurt

The pasta

  • 1 cup cooked Orzo pasta

Instructions

  1. Heat olive oil in a large pot over medium heat and cook the onion and garlic until tender.
  2. Add bay leaves, diced tomatoes, vegetable broth, brown sugar, and fresh basil. Season with red pepper flakes, salt, and pepper, then simmer for 15 minutes.
  3. Remove bay leaves and blend the soup until smooth. Stir in Greek yogurt and cooked orzo pasta. Serve warm.
