Caprese Penne

Ingredients

The pasta

  • ½ box whole wheat penne
  • 1 cup tomato sauce

The sauce

  • ¼ cup sour cream
  • ½ cup parmesan cheese

The toppings

  • 1 pint cherry tomatoes
  • 1 bunch fresh basil leaves
  • to taste fresh mozzarella, sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Boil water and cook the pasta according to the package directions.
  3. While the pasta is cooking, heat the tomato sauce in a large saucepan over low heat.
  4. Once the sauce is warm, stir in the sour cream and grated parmesan.
  5. Drain the cooked pasta and mix it with the sauce, then add the cherry tomatoes and some chopped basil leaves.
  6. Spray a baking dish with non-stick spray and pour the pasta mixture into it.
  7. Top with sliced mozzarella cheese.
  8. Bake for 10-15 minutes until the cheese is golden and bubbly.
  9. Garnish with additional fresh basil before serving.
