Ingredients

The muffins

  • 2 ¼ cup oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 whole eggs
  • cup maple syrup
  • cup coconut oil, melted
  • ¼ cup lemon juice
  • 1 tsp vanilla
  • cup Greek yogurt
  • 1 tbsp lemon zest
  • 1 ½ tbsp poppy seeds

The lemon glaze

  • ½ cup Greek yogurt
  • ¼ cup powdered sugar
  • ½ tsp vanilla
  • 1 tsp lemon juice

Alternative simple lemon glaze

  • 1 ½ cup powdered sugar
  • 2-3 tbsp almond milk
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners or spray.
  2. In a small bowl, combine oat flour, baking soda, baking powder, and salt.
  3. In a large bowl, whisk the eggs, then add maple syrup, coconut oil, lemon juice, and vanilla, followed by Greek yogurt.
  4. Fold the dry ingredients into the wet ingredients until well combined, then stir in lemon zest and poppy seeds.
  5. Fill the muffin tins ¾ full and bake for 15-17 minutes or until a toothpick comes out clean.
  6. While the muffins bake, prepare the glaze by mixing Greek yogurt, powdered sugar, vanilla, and lemon juice.
  7. Once the muffins are cool, dip them in the glaze or drizzle it on top.
  8. Store in the fridge for up to 5 days or freeze for later.
