Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners or spray.
- In a small bowl, combine oat flour, baking soda, baking powder, and salt.
- In a large bowl, whisk the eggs, then add maple syrup, coconut oil, lemon juice, and vanilla, followed by Greek yogurt.
- Fold the dry ingredients into the wet ingredients until well combined, then stir in lemon zest and poppy seeds.
- Fill the muffin tins ¾ full and bake for 15-17 minutes or until a toothpick comes out clean.
- While the muffins bake, prepare the glaze by mixing Greek yogurt, powdered sugar, vanilla, and lemon juice.
- Once the muffins are cool, dip them in the glaze or drizzle it on top.
- Store in the fridge for up to 5 days or freeze for later.
