Instructions
- Preheat the oven to 400°F and prepare a 12-cup muffin tin.
- In one bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the wet ingredients: yogurt, eggs, sugar, melted butter, milk, lemon juice, lemon zest, and vanilla.
- Combine the dry ingredients with the wet ingredients and stir until just combined, then fold in the poppy seeds.
- Scoop the batter into the muffin cups using a ⅓-cup measuring cup.
- Bake for 17 to 22 minutes until the tops spring back and a toothpick comes out clean.
- Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack.
