Ingredients

The muffins

  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 cup whole milk Greek yogurt
  • 2 large eggs
  • cup granulated sugar
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • ¼ cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 tablespoons poppy seeds

The lemon glaze (optional)

  • additional tablespoons lemon juice
  • additional cups powdered sugar

Instructions

  1. Preheat the oven to 400°F and prepare a 12-cup muffin tin.
  2. In one bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: yogurt, eggs, sugar, melted butter, milk, lemon juice, lemon zest, and vanilla.
  4. Combine the dry ingredients with the wet ingredients and stir until just combined, then fold in the poppy seeds.
  5. Scoop the batter into the muffin cups using a ⅓-cup measuring cup.
  6. Bake for 17 to 22 minutes until the tops spring back and a toothpick comes out clean.
  7. Let the muffins cool in the pan for 10 minutes before transferring them to a wire rack.
  8. Drizzle with lemon glaze if desired, or enjoy plain.
