Lemon Poke Cake

Instructions
- Preheat the oven to 375°F and prepare a 9x13-inch pan with nonstick spray.
- Dissolve the gelatin in boiling water and let it cool to room temperature.
- In a mixing bowl, beat together the oil, applesauce, and eggs until combined, then mix in the cooled gelatin.
- Gradually add the cake mix, mixing until just combined.
- Pour the batter into the prepared pan and bake for 25 to 30 minutes until a toothpick comes out clean.
- While the cake is baking, whisk together the powdered sugar and lemon juice until smooth.
- Once the cake is baked, poke holes in the top with a fork and pour the lemon glaze over it, allowing it to soak in.
- Let the cake cool to room temperature before serving with fresh berries and whipped cream.
