Ingredients

The cake

  • 1 package lemon gelatin (3-ounce)
  • 1 cup boiling water
  • ½ cup canola oil
  • cup unsweetened applesauce
  • 4 large eggs
  • 1 package yellow cake mix (15.25-ounce)

The glaze

  • 2 cups powdered sugar
  • cup freshly squeezed lemon juice

For serving

  • to taste fresh berries
  • to taste whipped cream

Instructions

  1. Preheat the oven to 375°F and prepare a 9x13-inch pan with nonstick spray.
  2. Dissolve the gelatin in boiling water and let it cool to room temperature.
  3. In a mixing bowl, beat together the oil, applesauce, and eggs until combined, then mix in the cooled gelatin.
  4. Gradually add the cake mix, mixing until just combined.
  5. Pour the batter into the prepared pan and bake for 25 to 30 minutes until a toothpick comes out clean.
  6. While the cake is baking, whisk together the powdered sugar and lemon juice until smooth.
  7. Once the cake is baked, poke holes in the top with a fork and pour the lemon glaze over it, allowing it to soak in.
  8. Let the cake cool to room temperature before serving with fresh berries and whipped cream.
