Easy Ricotta Gnocchi

Instructions
- Whisk together ricotta cheese, olive oil, egg, salt, and pepper in a medium bowl.
- Gradually add flour, ½ cup at a time, until a soft sticky dough forms (about 1.5 cups).
- Boil a large pot of water.
- Turn the dough onto a floured surface and knead in additional flour until it no longer sticks to your hands, keeping it soft.
- Divide the dough into six pieces and roll each into a rope about 1 inch thick, then cut into 1 inch sections.
- If desired, roll each piece on the back of a fork for texture.
- Drop the gnocchi into boiling water; they will rise to the surface when cooked.
- Once floating, boil for an additional 30 seconds to 1 minute, then drain.
- Serve with your favorite sauce or garlic butter.
