Easy Ricotta Gnocchi

Ingredients

  • 1 15 oz. container ricotta cheese
  • 1 large egg
  • 1 tsp olive oil
  • approx. 2 cups all-purpose flour
  • ¾ tsp salt
  • 10 cranks fresh cracked pepper

Instructions

  1. Whisk together ricotta cheese, olive oil, egg, salt, and pepper in a medium bowl.
  2. Gradually add flour, ½ cup at a time, until a soft sticky dough forms (about 1.5 cups).
  3. Boil a large pot of water.
  4. Turn the dough onto a floured surface and knead in additional flour until it no longer sticks to your hands, keeping it soft.
  5. Divide the dough into six pieces and roll each into a rope about 1 inch thick, then cut into 1 inch sections.
  6. If desired, roll each piece on the back of a fork for texture.
  7. Drop the gnocchi into boiling water; they will rise to the surface when cooked.
  8. Once floating, boil for an additional 30 seconds to 1 minute, then drain.
  9. Serve with your favorite sauce or garlic butter.
