Easy Spinach Gnocchi

Ingredients

  • 1 package frozen spinach (10 oz)
  • 1 ½ cups ricotta cheese (whole-milk)
  • ¾ cup parmesan cheese (grated)
  • 1 ¼ cups whole-wheat flour (+ more for dusting)
  • 1 large egg
  • to taste salt
  • to taste pepper

Instructions

  1. Defrost the spinach and squeeze out all excess liquid.
  2. Combine spinach, ricotta, parmesan, flour, and egg in a food processor and pulse until well mixed.
  3. Transfer the dough to a floured cutting board and sprinkle with flour until it no longer sticks.
  4. Divide the dough into 3 or 4 pieces and roll each into a thin log about 1 inch in diameter.
  5. Cut the logs into 1 to 1½ inch pieces and toss with a little more flour.
  6. Boil a large pot of water and add the gnocchi pieces.
  7. Cook until they float and are done throughout, about 3 to 5 minutes.
  8. Drain and toss with salt and pepper to taste, then serve with tomato sauce.
