Easy Spinach Gnocchi

ricotta cheese (whole-milk)

parmesan cheese (grated)

whole-wheat flour (+ more for dusting)

Instructions
- Defrost the spinach and squeeze out all excess liquid.
- Combine spinach, ricotta, parmesan, flour, and egg in a food processor and pulse until well mixed.
- Transfer the dough to a floured cutting board and sprinkle with flour until it no longer sticks.
- Divide the dough into 3 or 4 pieces and roll each into a thin log about 1 inch in diameter.
- Cut the logs into 1 to 1½ inch pieces and toss with a little more flour.
- Boil a large pot of water and add the gnocchi pieces.
- Cook until they float and are done throughout, about 3 to 5 minutes.
- Drain and toss with salt and pepper to taste, then serve with tomato sauce.
