Ingredients

The sauce

  • 2 tablespoons olive oil
  • ¼ onion minced
  • 1 large clove garlic
  • 12 ounces DeLallo Passata Tomato Purée
  • ½ cup broth or water
  • 1 handful torn basil
  • ¼ cup mascarpone cheese
  • ½ teaspoon salt

The gnocchi

  • 1 16-ounce package DeLallo Potato Gnocchi
  • 1 handful baby spinach
  • 8 ounces fresh mozzarella cheese slices
  • to taste Parmesan cheese

Instructions

  1. Preheat the oven to 400 degrees.
  2. Heat olive oil in a pan over medium-low heat, then add minced onion and garlic, sautéing until translucent.
  3. Stir in passata and broth or water, bringing the mixture to a low simmer.
  4. Add torn basil, mascarpone, and salt to the sauce, mixing well.
  5. In a baking dish, combine the gnocchi and spinach with the sauce, stirring to coat evenly.
  6. Top the mixture with mozzarella slices and sprinkle with Parmesan cheese.
  7. Bake for 15-20 minutes until the cheese is gooey and light golden brown.
  8. Serve with additional basil if desired.
