Baked Gnocchi with Vodka Sauce

Ingredients

Vodka Sauce

  • 2 tablespoons butter
  • 2 cloves garlic
  • 6 ounces tomato paste
  • ¼ cup vodka
  • 1 cup heavy cream
  • 1 cup chicken broth or water
  • 1 teaspoon kosher salt

Gnocchi

  • 2 kits DeLallo Gnocchi
  • ½ cup mozzarella cheese balls
  • ½ cup grated Parmesan cheese
  • to taste fresh parsley or basil

Instructions

  1. 1. Heat butter in a large oven-safe pan over medium-low heat and sauté garlic until soft.
  2. 2. Add tomato paste and sauté for 1-2 minutes.
  3. 3. Add vodka and sauté for another 1-2 minutes.
  4. 4. Stir in cream, broth, and salt, bringing the mixture to a low simmer until it coats the back of a spoon.
  5. 5. Prepare the gnocchi according to package directions and then combine with the sauce in the pan.
  6. 6. Preheat the oven to broil at 500 degrees Fahrenheit.
  7. 7. Arrange mozzarella balls on top, sprinkle with grated Parmesan, and bake for 5-8 minutes until browned and crisped.
  8. 8. Garnish with parsley or basil and serve.
