Bacon + Sausage + Marinara Baked Gnocchi

Ingredients

  • 1 cup chopped bacon
  • 8 ounces hot Italian sausage
  • 1 Tbsp. extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1 24 oz. jar Rao's Homemade Marinara Sauce
  • 1 tsp. sugar
  • ½ tsp. crushed red pepper
  • 4 cups gnocchi
  • 3 leaves fresh basil, finely chopped
  • 1 small handful fresh oregano leaves, finely chopped
  • cup freshly grated parmesan
  • cups fresh mozzarella, grated

Instructions

  1. 1. Cook the chopped bacon in a large sauté pan over medium heat until crisp and dark brown, about 10-12 minutes, then transfer it to a paper towel-lined plate.
  2. 2. Discard excess liquids from the pan, then cook the hot Italian sausage in the same pan for 5-7 minutes until cooked through, and transfer to the plate with the bacon.
  3. 3. Add olive oil to the pan, then add the chopped onion and cook for 5-7 minutes until softened, stirring occasionally.
  4. 4. Add minced garlic and cook for another 1-2 minutes until fragrant.
  5. 5. Stir in the marinara sauce, then add the bacon and sausage back into the pan along with sugar and crushed red pepper. Allow to simmer.
  6. 6. Boil the gnocchi according to package instructions, about 2-3 minutes, then drain and add to the sauce mixture.
  7. 7. Preheat the oven to 375°F.
  8. 8. Remove the pan from heat, mix in the chopped herbs and parmesan, then layer half of the gnocchi and sauce in a baking dish, topping with mozzarella.
  9. 9. Add the remaining gnocchi and sauce, then top with the remaining mozzarella.
  10. 10. Bake uncovered for 15 minutes, then broil for an additional 5 minutes for a bubbly top.
  11. 11. Serve hot and enjoy.
