Baked Gnocchi with Sausage

Instructions
- Preheat the oven to 350°F.
- Bring a large pot of salted water to a boil and cook the gnocchi according to the package instructions. Drain and set aside.
- In a large skillet, cook the sausage over medium-high heat for 8-10 minutes until thoroughly cooked, then drain and set aside.
- In the same skillet, cook the kale for 5 minutes until tender, then add the sausage back in.
- In a saucepan, melt the butter over medium heat, then stir in the garlic and cook until golden.
- Whisk in the flour until thickened, then add the milk and whisk until the sauce thickens.
- Stir in the pesto and ½ cup of mozzarella cheese, mixing until smooth. Season with salt and black pepper.
- Spray a 9x13-inch baking dish with nonstick spray, then combine the gnocchi, sausage, and kale in the dish.
- Pour the sauce evenly over the gnocchi and sprinkle with the remaining mozzarella and parmesan cheese.
- Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for an additional 5 minutes until cheese is melted and bubbling.
- Let sit for 5 minutes before serving warm.
