Ingredients

The base

  • 3 tablespoons olive oil
  • ¼–½ teaspoon red pepper flakes
  • 1 tablespoon whole fennel seeds
  • 4 large garlic cloves, chopped small
  • 28 ounce-can whole peeled tomatoes
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons dried oregano
  • 1 bunch kale, destemmed and chopped (about 4 cups)

The proteins

  • ½ pound Italian sausage links, precooked

The gnocchi

  • pounds gnocchi, uncooked

The cheese

  • 8 ounces fresh mozzarella, cut into ¼" slices
  • ¾ cup pecorino romano or parmesan, grated

Instructions

  1. Preheat the oven to 350°F.
  2. Sauté garlic with red pepper flakes and fennel seeds in olive oil for 2-3 minutes.
  3. Add tomatoes, salt, pepper, and oregano, breaking up the tomatoes.
  4. Add kale and simmer on low for about 10 minutes until tender.
  5. Remove from heat, then add sausage and gnocchi, topping with grated cheese.
  6. Bake uncovered for 20 minutes until bubbling.
