One Pan Creamy Gnocchi with Italian Sausage and Kale

Ingredients

  • 16 oz. mild Italian sausage
  • tsp olive oil
  • ½ cup finely chopped yellow onion
  • 2 tsp minced garlic
  • ¾ cup low-sodium chicken broth
  • ¾ cup milk
  • 1 (6 oz) bunch kale, thicks ribs removed, chopped
  • 1 (16 oz.) pkg. potato gnocchi
  • to taste freshly ground black pepper
  • cup heavy cream
  • cup finely shredded parmesan cheese
  • to taste red pepper flakes (optional)

Instructions

  1. 1. Heat oil in a non-stick skillet over medium-high heat and brown the sausage.
  2. 2. Transfer the cooked sausage to a plate and leave some oil in the skillet.
  3. 3. Reduce heat to medium and sauté the onion until softened, then add garlic.
  4. 4. Pour in chicken broth and milk, bring to a simmer, then add kale and cover to steam until wilted.
  5. 5. Add gnocchi, season with pepper, cover, and cook until tender and most of the liquid is absorbed.
  6. 6. Stir in cream, parmesan, and the cooked sausage, then serve warm.
