Instructions
- Heat olive oil in a large, deep skillet over medium heat.
- Dice the onion and mash the garlic, then add the onion to the skillet and cook for 2-3 minutes.
- Add the sausage to the skillet, breaking it apart as it cooks until browned.
- Stir in the mashed garlic and Italian seasoning, cooking for another minute.
- Pour in the marinara sauce and chicken broth, mixing well before adding the gnocchi.
- Bring the mixture to a gentle boil, then reduce heat and let it simmer for 6-8 minutes until the gnocchi is cooked.
- Add the spinach and heavy cream or coconut milk, stirring until the spinach wilts.
- Grate in the Parmigiano Reggiano and season with sea salt and black pepper to taste.
- Remove from heat, allow to cool slightly, then serve.
