One-Pan Italian Sausage Gnocchi

Ingredients

  • 2 teaspoons Olive Oil
  • 1 pound Mild Italian Sausage
  • 1 medium Yellow Onion
  • 4 cloves Garlic
  • 2 teaspoons Italian Seasoning
  • ¾ cup Marinara Sauce
  • cups Chicken Broth
  • 16 ounces Fresh Potato Gnocchi
  • 3 cups Fresh Spinach
  • cup Heavy Cream or Coconut Milk
  • ½ cup Parmigiano Reggiano
  • to taste Sea Salt
  • to taste Ground Black Pepper

Instructions

  1. Heat olive oil in a large, deep skillet over medium heat.
  2. Dice the onion and mash the garlic, then add the onion to the skillet and cook for 2-3 minutes.
  3. Add the sausage to the skillet, breaking it apart as it cooks until browned.
  4. Stir in the mashed garlic and Italian seasoning, cooking for another minute.
  5. Pour in the marinara sauce and chicken broth, mixing well before adding the gnocchi.
  6. Bring the mixture to a gentle boil, then reduce heat and let it simmer for 6-8 minutes until the gnocchi is cooked.
  7. Add the spinach and heavy cream or coconut milk, stirring until the spinach wilts.
  8. Grate in the Parmigiano Reggiano and season with sea salt and black pepper to taste.
  9. Remove from heat, allow to cool slightly, then serve.
