Sausage Gnocchi Soup

can white northern beans, rinsed and drained

potato gnocchi
Spices and condiments

dried minced garlic

dried minced onion

dried basil

dried rosemary

red pepper flakes

salt, or more to taste

vinegar-based hot sauce
Instructions
- Cook the Italian sausage in a large pot over medium/high heat until partially cooked, then add the onion and sauté until translucent.
- Add mushrooms and garlic, sauté until mushrooms cook down, then add carrots and spices, sauté for another 2-3 minutes.
- Add diced tomatoes and broth, bring to a boil. Once boiling, add white beans, spinach, and gnocchi, and boil until the gnocchi float.
- Reduce heat to low and let simmer for 5-10 minutes, tasting and adding salt as needed.
- Serve with freshly cracked pepper.
