Easy Sausage and Gnocchi Soup

Ingredients

The soup base

  • 1 tablespoon extra virgin olive oil
  • 10 ounces ground pork sausage
  • ¾ teaspoon dried fennel seeds
  • ¼ teaspoon red pepper flakes
  • ½ yellow onion chopped
  • 3 cloves garlic
  • 2 cups chicken stock
  • 2 cups water
  • 1 15 ounce can diced tomatoes with their juice
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

The gnocchi and greens

  • 1 16 ounce package gnocchi
  • 2 cups fresh spinach
  • to taste Parmesan cheese, grated

Instructions

  1. Heat oil in a large pot over medium-high heat.
  2. Add sausage, fennel seeds, and red pepper flakes; brown the sausage while breaking it apart.
  3. Stir in onion and garlic; cook until softened.
  4. Add chicken stock, water, tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
  5. Simmer for 10 minutes.
  6. Add gnocchi and cook until they float, about 5 minutes.
  7. Turn off heat, stir in spinach, and serve hot with Parmesan cheese.
