Instructions
- Heat oil in a large pot over medium-high heat.
- Add sausage, fennel seeds, and red pepper flakes; brown the sausage while breaking it apart.
- Stir in onion and garlic; cook until softened.
- Add chicken stock, water, tomatoes, Italian seasoning, salt, and pepper; bring to a boil.
- Simmer for 10 minutes.
- Add gnocchi and cook until they float, about 5 minutes.
- Turn off heat, stir in spinach, and serve hot with Parmesan cheese.
