Kale and Sausage Gnocchi Bake

Ingredients

  • 16 ounces gnocchi
  • 1 tablespoon olive oil
  • ½ pound ground pork or turkey Italian sausage
  • 2-3 cups baby spinach or chopped kale
  • 3-4 cloves garlic
  • 1 tablespoon dried oregano leaves
  • ½ teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 24 ounces marinara sauce
  • ½ cup fresh basil, oregano and/or flat-leaf Italian parsley, chopped
  • ½ cup shredded mozzarella cheese
  • ½ cup freshly shaved Parmesan cheese

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Cook the gnocchi according to package directions and dry them on a paper towel.
  3. 3. In a large skillet, heat olive oil over medium heat and add the sausage, cooking until browned.
  4. 4. Stir in the gnocchi and sauté until lightly browned.
  5. 5. Add the greens and garlic, cooking until the greens are wilted.
  6. 6. Stir in oregano, salt, pepper, and red pepper flakes.
  7. 7. Mix in the marinara sauce and fresh herbs until combined.
  8. 8. Sprinkle mozzarella on top and bake for 10-15 minutes until melted and bubbly.
  9. 9. Let cool slightly, then serve topped with Parmesan cheese.
