Sausage and Bacon Cheesy Baked Gnocchi

Ingredients

  • 3 slices thick-cut Bacon, cut into 1/2" pieces
  • 8 ounces Italian Sausage
  • ½ cup Cherry Tomatoes, quartered
  • 2 cloves fresh Garlic, minced
  • ½ tsp. Red Pepper Flakes
  • 24 oz. Marinara Sauce
  • 1 tsp. Sugar
  • to taste Salt + freshly cracked Black Pepper
  • 16 oz. Gnocchi (regular or miniature)
  • 4 oz. Fresh Mozzarella, cut or torn into small pieces
  • 8 oz. shredded Italian Cheese blend
  • to taste finely chopped Fresh Parsley (or fresh basil), for garnish

Instructions

  1. 1. Heat a large cast iron pan over medium heat and cook the bacon until crispy.
  2. 2. Add the quartered cherry tomatoes, season with salt and pepper, and cook until softened.
  3. 3. Add the Italian sausage and cook until browned.
  4. 4. Mix in the minced garlic and cook until fragrant.
  5. 5. Pour in the marinara sauce and add sugar, mixing until combined.
  6. 6. Preheat the oven to 350°F.
  7. 7. Add uncooked gnocchi to the pan and mix thoroughly with the sauce.
  8. 8. Allow the gnocchi to simmer in the sauce while the oven heats up.
  9. 9. Distribute the pieces of fresh mozzarella over the top.
  10. 10. Bake for 10 minutes, then remove from the oven and sprinkle with shredded Italian cheese.
  11. 11. Broil for 2-3 minutes until the cheese is melted and browned.
  12. 12. Garnish with chopped parsley or basil and serve hot.
