Ingredients

The Gnocchi

  • 1 package whole wheat gnocchi (16 oz)

The Sauce

  • 2 tablespoons butter
  • 2 tablespoons pine nuts
  • 2 cloves garlic (minced)
  • 10 oz fresh baby spinach (torn)
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 oz Parmesan cheese (freshly grated)

Instructions

  1. 1. Cook the gnocchi according to the package directions, then drain and set aside.
  2. 2. In a large sauté pan, melt the butter over medium heat.
  3. 3. Add the pine nuts and cook for about 3 minutes until they start to brown.
  4. 4. Stir in the garlic and cook for 1 minute.
  5. 5. Add the cooked gnocchi and spinach, cooking for 1 minute while stirring until the spinach wilts.
  6. 6. Season with salt and pepper.
  7. 7. Divide the dish onto four plates and sprinkle each serving with Parmesan cheese.
