Simple Vegan Mexican Rice

Ingredients

The rice

  • 1 ½ cups dried long grain brown rice

The broth and salsa

  • 3 cups veggie broth
  • ¾ cups jarred salsa

The vegetables

  • ½ cup chopped carrots
  • ½ cup frozen corn
  • ½ cup frozen peas
  • ¼ cup chopped cilantro

The seasonings

  • ½ - 1 teaspoon sea salt
  • drizzle N/A oil (optional)

Instructions

  1. Brown the rice in a pot with a drizzle of oil over medium heat until browned.
  2. Add the veggie broth and salsa to the pot, then bring to a boil.
  3. Reduce heat to medium-low, cover, and cook for 30-35 minutes, checking and adding more broth if needed.
  4. Remove from heat and let stand for 5 minutes, then fluff with a fork.
  5. Mix in cilantro if using and serve.
