Simple Vegan Mexican Rice

Instructions
- Brown the rice in a pot with a drizzle of oil over medium heat until browned.
- Add the veggie broth and salsa to the pot, then bring to a boil.
- Reduce heat to medium-low, cover, and cook for 30-35 minutes, checking and adding more broth if needed.
- Remove from heat and let stand for 5 minutes, then fluff with a fork.
- Mix in cilantro if using and serve.
