Ingredients

  • 13.5 ounces coconut milk
  • 3 tablespoons curry paste
  • 1 tablespoon ginger
  • 1 unit red chili
  • 3 cloves garlic
  • ½ small cauliflower
  • 1 large bell pepper
  • 2 small potatoes
  • 1 tablespoon coriander
  • 2 cups peas

Instructions

  1. Combine the coconut milk, curry paste, ginger, chili, garlic, cauliflower, bell pepper, and potatoes in a slow cooker and stir well.
  2. Cook on low heat for 6 hours, or until the vegetables are tender.
  3. Stir in the coriander and frozen peas and simmer for another 5 minutes.
  4. Mix everything together and serve immediately.
