The Sauce

heavy cream

plain full-fat yogurt

Instructions
- Melt the butter in a large pot over medium heat and sauté onions, garlic, and ginger until softened.
- Add cardamom, coriander, turmeric, cumin, red pepper flakes, and cinnamon, and sauté until fragrant.
- Add potatoes and water, cover, and simmer until potatoes are tender. Then add green beans and bell peppers, and simmer uncovered until all vegetables are tender.
- Lower the heat to avoid curdling, then add cream, yogurt, salt, and garam masala. Add extra water if necessary.
- Season with salt and pepper, serve over rice, and garnish with cilantro.
