Ingredients

Chickpea Patties

  • ½ cup chickpea flour
  • 2 tablespoons nutritional yeast flakes
  • ½ teaspoon baking powder
  • ½ teaspoon ground coriander
  • ¼ teaspoon turmeric
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup water
  • 1 tablespoon soy sauce
  • ½ tablespoon olive oil

Sandwich Assembly

  • 4 pieces English muffins, split and toasted
  • ½ cup jarred salsa
  • ½ ripe avocado sliced
  • ½ cup fresh baby spinach leaves

Instructions

  1. Prepare the Cholula cashew cheese by blending soaked cashews with lemon juice, milk, Cholula sauce, and salt until smooth.
  2. Mix chickpea flour, nutritional yeast, baking powder, spices, and salt in a bowl. Add water and soy sauce, then stir to combine.
  3. Heat olive oil in a skillet and form chickpea batter into patties. Cook until lightly browned on both sides.
  4. Assemble the sandwiches by spreading salsa on English muffins, adding spinach, a chickpea patty, Cholula cashew cheese, avocado slices, and top with the muffin halves.
