Vegan Caprese Sandwiches

Ingredients

Garlic Cashew Cheese

  • 1 cup raw cashews
  • 2 medium garlic cloves
  • 2 tbsp lemon juice
  • 2 tbsp unflavored soy or almond milk
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ½ tsp black pepper

Sandwich Assembly

  • cup balsamic vinegar
  • 1 baguette cut into 4 sections
  • ½ cup clover or alfalfa sprouts
  • 2 medium tomatoes, thinly sliced
  • 1 cup fresh basil leaves

Instructions

  1. Soak cashews in water for 4–8 hours, then rinse and drain.
  2. Blend cashews and garlic into a paste, scraping down the sides as needed.
  3. Add lemon juice, milk, olive oil, salt, and pepper, then blend until smooth.
  4. Heat balsamic vinegar in a saucepan and simmer until reduced to about 2 tablespoons.
  5. Spread garlic cashew cheese on each side of the baguette sections.
  6. Layer sprouts over the cheese, then add tomato slices and drizzle with balsamic vinegar.
  7. Top with fresh basil leaves and serve.
