Vegan Caprese Sandwich

Ingredients

The sandwich

  • 2 slices French bread
  • 1 medium tomato
  • 3 slices vegan mozzarella cheese

The pesto

  • 3 tablespoons parsley pesto

Instructions

  1. Layer mozzarella and tomato slices on one slice of bread.
  2. Spread parsley pesto on the other slice of bread and press them together.
  3. Toast the sandwich in a panini press on medium heat for about 5 minutes until crispy and the cheese is melted.
  4. Remove from the press, cut in half, and serve.
