Ingredients

The beans

  • 16 oz pinto beans (soaked in water overnight or 6-9 hours)
  • 2 tsp minced garlic
  • ½ c chopped white onion
  • 3-4 tsp cumin
  • 3-4 tsp chili powder
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp finely chopped cilantro

The liquid and optional ingredients

  • enough to cover water or gluten free vegetarian broth water or gluten free vegetarian broth
  • 1-2 chopped/sliced jalapeno
  • ⅔ to ¾ c diced tomatoes (optional)
  • optional pork or ham bones

Instructions

  1. Clean and rinse the beans, then soak them in water for 6 to 9 hours.
  2. After soaking, drain the beans and return them to the pot.
  3. Mix in garlic, ham bones (if using), onion, cumin, chili powder, and black pepper.
  4. Pour broth over the beans to cover them by at least 1 inch, then bring to a boil.
  5. Simmer uncovered for 90 minutes or until the beans are tender, checking liquid levels halfway.
  6. Once tender, remove ham bones (if using) and add salt, jalapenos, and cilantro.
  7. Cook on low for an additional 25-30 minutes until the jalapenos are softened.
  8. Remove from heat and garnish with cilantro and chili pepper before serving.
