Ingredients

The beans and vegetables

  • 1 cup chopped red onion
  • 1 cup chopped red pepper
  • 3 cloves garlic

The cooking liquids and seasonings

  • 4-5 cups broth
  • ½ cup white wine
  • ¼ teaspoon liquid smoke
  • 2 teaspoons dried oregano
  • 2 teaspoons cumin
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • to taste chopped cilantro (optional)

For sautéing

  • to drizzle oil or broth

Instructions

  1. Sauté onion, pepper, and garlic with oil or broth until softened.
  2. Add the rest of the ingredients and bring to a rapid boil for about 10 minutes.
  3. Cover, reduce to a simmer, and cook for about an hour, checking for desired texture.
  4. Serve as desired, noting that the beans thicken as they sit.
