Ingredients

The beans

  • 2 cups dry pinto beans

The aromatics

  • 1 tablespoon avocado oil
  • ½ white onion chopped
  • teaspoons ground cumin
  • ½ teaspoon dried oregano
  • 2 teaspoons sea salt
  • 1 tablespoon fresh lime juice
  • to taste freshly ground black pepper
  • to taste chili powder

Optional additions

  • 1 jalapeño pepper stemmed and diced
  • to taste fresh cilantro for garnish

Instructions

  1. Sort and rinse the beans, then soak them in water for at least 8 hours.
  2. In a pot, heat the oil and sauté the onion until soft, adding jalapeño if desired.
  3. Stir in cumin, then add the soaked beans, water, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer until the beans are tender, checking periodically.
  5. Once cooked, stir in lime juice and season to taste with more salt, pepper, and chili powder.
  6. Garnish with cilantro if using and serve.
