Instructions
- Sort and rinse the beans, then soak them in water for at least 8 hours.
- In a pot, heat the oil and sauté the onion until soft, adding jalapeño if desired.
- Stir in cumin, then add the soaked beans, water, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until the beans are tender, checking periodically.
- Once cooked, stir in lime juice and season to taste with more salt, pepper, and chili powder.
- Garnish with cilantro if using and serve.
