Instructions
- Soak the pinto beans in a large bowl of water for 8-24 hours.
- Drain and rinse the beans, then add them to a Dutch oven or heavy-bottomed pot.
- Cover the beans with 4-6 cups of cold water, ensuring they are submerged by about 3 inches.
- Add the chopped onion, smashed garlic, bay leaves, and olive oil to the pot.
- Season with kosher salt and bring the mixture to a boil.
- Skim off any foam that forms on the surface and discard it.
- Reduce the heat to medium-low and simmer the beans uncovered for about 2 hours or until tender, adding more water if necessary.
- Once the beans are cooked to your desired tenderness, remove from heat and discard the bay leaves.
- Taste and adjust seasoning with more salt if needed, then serve immediately or refrigerate the leftovers.
