Ingredients

The beans

  • 1 pound dried pinto beans
  • 4-6 cups water

The flavorings

  • cup extra-virgin olive oil
  • ½ yellow onion chopped
  • 4 cloves garlic
  • 2 pieces bay leaves
  • 1 tablespoon kosher salt

Instructions

  1. Soak the pinto beans in a large bowl of water for 8-24 hours.
  2. Drain and rinse the beans, then add them to a Dutch oven or heavy-bottomed pot.
  3. Cover the beans with 4-6 cups of cold water, ensuring they are submerged by about 3 inches.
  4. Add the chopped onion, smashed garlic, bay leaves, and olive oil to the pot.
  5. Season with kosher salt and bring the mixture to a boil.
  6. Skim off any foam that forms on the surface and discard it.
  7. Reduce the heat to medium-low and simmer the beans uncovered for about 2 hours or until tender, adding more water if necessary.
  8. Once the beans are cooked to your desired tenderness, remove from heat and discard the bay leaves.
  9. Taste and adjust seasoning with more salt if needed, then serve immediately or refrigerate the leftovers.
