Refried Beans

Ingredients

The beans

  • 1 pound dried pinto beans
  • 4-6 cups water

The flavorings

  • cup extra virgin olive oil
  • ½ yellow onion chopped
  • 4 cloves garlic
  • 2 pieces bay leaves
  • 1 tablespoon kosher salt
  • 2 tablespoons vegetable oil
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Soak the dried beans in water overnight or for 8-24 hours, then drain and rinse.
  2. Add the beans to a pot with fresh water, onion, garlic, bay leaves, and olive oil.
  3. Bring to a boil, skim off foam, then reduce heat and simmer for about 2 hours until tender.
  4. If using canned beans, reserve the liquid and sauté onion and garlic in vegetable oil.
  5. Add the beans to the skillet, mashing and stirring while adding reserved bean liquid until the desired consistency is reached.
  6. Season with additional salt and pepper to taste.
