Refried Beans

freshly ground black pepper
Instructions
- Soak the dried beans in water overnight or for 8-24 hours, then drain and rinse.
- Add the beans to a pot with fresh water, onion, garlic, bay leaves, and olive oil.
- Bring to a boil, skim off foam, then reduce heat and simmer for about 2 hours until tender.
- If using canned beans, reserve the liquid and sauté onion and garlic in vegetable oil.
- Add the beans to the skillet, mashing and stirring while adding reserved bean liquid until the desired consistency is reached.
- Season with additional salt and pepper to taste.
