Easy Homemade Refried Beans

Ingredients

The beans

  • 1 lb dried pinto beans
  • 5 cups water
  • ½ teaspoon salt

The spices

  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 bay leaves
  • 1 teaspoon garlic powder
  • ¼–1 teaspoon chipotle powder (optional)
  • ½–1 teaspoon smoked paprika (optional)

The oil

  • 2–3 tablespoons olive oil (optional)

Optional garnishes

  • cilantro
  • lime wedges
  • queso fresco

Instructions

  1. Soak the dried beans overnight in water.
  2. Drain the soaked beans and place them in a large pot with fresh water, salt, spices, and bay leaves.
  3. Bring to a boil, then cover and simmer until the beans are tender, about 1½ to 2 hours.
  4. Drain the beans, reserving some cooking liquid, and remove the bay leaves.
  5. Mash the beans with a potato masher or puree in a food processor, adding reserved liquid to achieve desired consistency.
  6. Stir in olive oil for extra richness and flavor.
  7. Keep warm until ready to serve, or refrigerate or freeze for later use.
