Homemade Refried Beans

Ingredients

The beans

  • 1 pound dried pinto beans
  • ½ medium onion, chopped
  • ½ medium green bell pepper, chopped
  • 2 cloves garlic, finely grated

The meat and fat

  • 5 ounces salt pork or thick-cut bacon, cut into ½-inch pieces
  • 1 cup lard or rendered bacon fat, divided

Seasoning

  • 4 teaspoons kosher salt

For serving

  • Pico de gallo
  • crumbled queso fresco

Instructions

  1. Step 1: In a large pot, combine onion, bell pepper, garlic, beans, pork, salt, and water. Bring to a boil, then reduce heat and cook uncovered until beans are tender, about 2 to 2½ hours.
  2. Step 2: In batches, heat lard in a skillet over high heat. Fry beans and their liquid until most liquid evaporates. Mash beans until thick but still pourable. Transfer to a bowl and repeat with remaining beans.
  3. Step 3: Serve refried beans topped with pico de gallo and queso fresco.
