Instructions
Step 1: In a large pot, combine onion, bell pepper, garlic, beans, pork, salt, and water. Bring to a boil, then reduce heat and cook uncovered until beans are tender, about 2 to 2½ hours.
Step 2: In batches, heat lard in a skillet over high heat. Fry beans and their liquid until most liquid evaporates. Mash beans until thick but still pourable. Transfer to a bowl and repeat with remaining beans.
Step 3: Serve refried beans topped with pico de gallo and queso fresco.
