Refried Beans

Ingredients

The beans

  • 2 cups dry pinto beans
  • 8 cups water
  • 1 whole white onion
  • 1 teaspoon ground cumin
  • ¾ teaspoon sea salt
  • ½ teaspoon dried oregano
  • to taste freshly ground black pepper

The cooking ingredients

  • 2 tablespoons avocado oil
  • 2 cloves garlic
  • 2 tablespoons fresh lime juice

Instructions

  1. Sort and rinse the beans, removing any stones or debris.
  2. In a large pot, combine the beans, water, onion wedges, cumin, salt, oregano, and black pepper. Bring to a boil, then reduce heat and simmer until beans are tender, adding water as needed.
  3. Once tender, drain the beans, reserving the cooking liquid.
  4. In a skillet, heat avocado oil over medium heat and sauté the diced onion and garlic until soft.
  5. Add the cooked beans and ½ cup of the reserved cooking liquid to the skillet. Mash the beans to your desired consistency, adding more liquid as needed.
  6. Stir in lime juice and season with additional salt and lime juice to taste.
  7. Serve as a side dish or use in other recipes.
