Refried Beans

The cooking ingredients

avocado oil

fresh lime juice
Instructions
- Sort and rinse the beans, removing any stones or debris.
- In a large pot, combine the beans, water, onion wedges, cumin, salt, oregano, and black pepper. Bring to a boil, then reduce heat and simmer until beans are tender, adding water as needed.
- Once tender, drain the beans, reserving the cooking liquid.
- In a skillet, heat avocado oil over medium heat and sauté the diced onion and garlic until soft.
- Add the cooked beans and ½ cup of the reserved cooking liquid to the skillet. Mash the beans to your desired consistency, adding more liquid as needed.
- Stir in lime juice and season with additional salt and lime juice to taste.
- Serve as a side dish or use in other recipes.
