Ingredients

The beans

  • 2 cans pinto beans
  • ½ cup water

The aromatics and spices

  • 1 tablespoon extra-virgin olive oil
  • ½ cup finely chopped onion
  • 2 cloves garlic
  • ¼ teaspoon fine sea salt
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cumin

The finishing touches

  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil in a medium saucepan over medium heat until shimmering.
  2. Add onions and salt, cooking until softened and translucent.
  3. Stir in garlic, chili powder, and cumin, cooking until fragrant.
  4. Add drained beans and water, stir, cover, and cook for 5 minutes.
  5. Reduce heat to low, mash about half of the beans, and cook uncovered for 3 more minutes.
  6. Remove from heat and stir in cilantro and lime juice, adjusting salt and lime to taste.
