Instructions
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, combine almond meal, oats, cinnamon, baking soda, salt, and optional mix-ins.
- In another bowl, whisk together honey, eggs, and melted butter, then mix in the grated apple and carrots.
- Combine the wet and dry ingredients until just mixed.
- Spoon the batter into the muffin cups, filling each to the brim.
- Bake for 25 to 30 minutes until browned and a knife comes out clean.
- Cool completely before storing in an airtight container.
