Ingredients

The Muffin Base

  • 2 cups almond meal or almond flour
  • 1 ½ cups old-fashioned oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt

Optional Mix-ins

  • ½ cup chopped walnuts or pecans, raisins, or chocolate chips

Wet Ingredients

  • ½ cup honey or maple syrup
  • 3 large eggs
  • 6 tablespoons unsalted butter, melted

Fruits and Vegetables

  • 1 cup grated Granny Smith apple
  • 1 cup peeled and grated carrots

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, combine almond meal, oats, cinnamon, baking soda, salt, and optional mix-ins.
  3. In another bowl, whisk together honey, eggs, and melted butter, then mix in the grated apple and carrots.
  4. Combine the wet and dry ingredients until just mixed.
  5. Spoon the batter into the muffin cups, filling each to the brim.
  6. Bake for 25 to 30 minutes until browned and a knife comes out clean.
  7. Cool completely before storing in an airtight container.
