Instructions
- Preheat the oven to 375°F.
- Whisk together lemon juice, olive oil, dijon mustard, dried oregano, pressed garlic, salt, and pepper to make the lemon garlic sauce.
- On a large sheet pan, add halved baby potatoes and drizzle with half of the lemon garlic sauce, then roast for 20 minutes.
- After roasting the potatoes, add halved tomatoes and gently toss.
- Nestle the salmon filets among the potatoes and tomatoes, drizzling the remaining lemon garlic sauce over each filet.
- Add lemon slices on top of the salmon and among the vegetables.
- Return to the oven and bake for 8-12 minutes until the salmon is cooked through.
- Serve topped with feta, fresh herbs, and tzatziki.
