Ingredients

The main ingredients

  • lbs baby potatoes, halved
  • 4 filets BAP certified salmon
  • 1 pint baby tomatoes, halved
  • 1 lemon sliced

For the lemon garlic sauce

  • 1 juiced lemon
  • ¼ cup olive oil
  • 1 tbsp dijon mustard
  • 1 tbsp dried oregano
  • 3 cloves garlic, pressed
  • tsp salt
  • ½ tsp pepper

For serving

  • 1 cup cubed or crumbled feta cheese
  • ¼ cup chopped fresh dill
  • ¼ cup chopped fresh parsley
  • to taste tzatziki

Instructions

  1. Preheat the oven to 375°F.
  2. Whisk together lemon juice, olive oil, dijon mustard, dried oregano, pressed garlic, salt, and pepper to make the lemon garlic sauce.
  3. On a large sheet pan, add halved baby potatoes and drizzle with half of the lemon garlic sauce, then roast for 20 minutes.
  4. After roasting the potatoes, add halved tomatoes and gently toss.
  5. Nestle the salmon filets among the potatoes and tomatoes, drizzling the remaining lemon garlic sauce over each filet.
  6. Add lemon slices on top of the salmon and among the vegetables.
  7. Return to the oven and bake for 8-12 minutes until the salmon is cooked through.
  8. Serve topped with feta, fresh herbs, and tzatziki.
