Sheet Pan Baked Salmon with Vegetables

Ingredients

The marinade

  • 3 tablespoons avocado oil or olive oil
  • ¼ cup lemon juice
  • 2 cloves garlic
  • 1 tablespoon fresh dill or ½ teaspoon dried dill
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper

The main ingredients

  • 1 ¼ pounds salmon fillets
  • 1 pound sweet potato
  • 12 ounces fresh green beans
  • ½ small red onion
  • ½ lemon thinly sliced

Instructions

  1. Preheat the oven to 425℉ and line a baking sheet with parchment paper.
  2. Make the marinade by whisking together oil, lemon juice, garlic, dill, salt, and pepper; set aside 2 tablespoons.
  3. Marinate the salmon fillets with half of the remaining marinade in the fridge.
  4. Slice the sweet potato thinly and place on the baking sheet, drizzling with the other half of the marinade.
  5. Bake the sweet potatoes for 10 minutes, then add green beans and onion tossed with the reserved marinade and bake for another 5 minutes.
  6. Add the marinated salmon fillets on the sheet pan, top with lemon slices, and bake for 10-15 minutes until cooked through.
  7. Serve with additional lemon slices and seasonings if desired.
